- 1 3/4 cups granulated sugar
- 2 large eggs

Instructions
- Brown the butter: Melt butter in a saucepan over medium heat. Cook, swirling often, until it turns golden brown and smells nutty. Remove from heat and let cool slightly.
- Cream the butter and sugar: In a bowl, cream together the brown butter and 1 3/4 cups sugar until combined.
- Add eggs and vanilla: Beat in the eggs one at a time, then stir in the vanilla.
- Combine dry ingredients: In a separate bowl, whisk together the flour, baking soda, and salt.
- Combine wet and dry: Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Coat in cinnamon sugar: Mix the cinnamon and remaining sugar in a shallow dish.
- Shape and bake: Roll dough into balls, then coat in cinnamon sugar. Place on a baking sheet and bake at 350°F (175°C) for 9-11 minutes.
- Cool and enjoy: Let cool on the baking sheet for a few minutes before transferring to a wire rack.
