Make your weeknight Taco Tuesday meals better with this delicious Cheesy Taco Rice Casserole. It’s easy to make and a crowd-pleaser.

- 1 pound ground beef
- 1 onion, chopped
- 1 packet taco seasoning
- 1 ½ cups water
- 1 cup long-grain rice
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (10 ounce) can diced tomatoes and green chilies, undrained
- 2 cups shredded cheddar cheese
- Optional toppings: sour cream, salsa, guacamole, chopped cilantro
Instructions
- Brown ground beef and onion. Drain excess grease.
- Stir in taco seasoning and water. Bring to a boil.
- Add rice, black beans, and diced tomatoes.
- Reduce heat and simmer, covered, for 20 minutes, or until rice is cooked.
- Stir in 1 cup of cheese.
- Top with remaining cheese.
- Bake at 350°F (175°C) for 15 minutes, or until cheese is melted and bubbly.
- Serve with your favorite toppings.
Notes
- You can substitute ground turkey or chicken for ground beef.
- Add corn for extra texture and flavor.
- Spice it up with a pinch of cayenne pepper.
