Ingredients

  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 4 cups chicken broth
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 2 cups cooked chicken, shredded
  • 1/2 cup corn
  • Salt and pepper to taste
  • Tortilla chips, for serving
  • Avocado, for serving
  • Lime wedges, for serving


Instructions

  1. Heat olive oil in a large pot.
  2. Sauté onion until softened. Add garlic, chili powder, and cumin. Cook for 1 minute.
  3. Pour in chicken broth and diced tomatoes. Bring to a boil.
  4. Add cooked chicken and corn. Simmer for 15 minutes.
