Ingredients

- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1/2 tsp cumin
- 4 cups chicken broth
- 1 (14.5 oz) can diced tomatoes, undrained
- 2 cups cooked chicken, shredded
- 1/2 cup corn
- Salt and pepper to taste
- Tortilla chips, for serving
- Avocado, for serving
- Lime wedges, for serving
Instructions
- Heat olive oil in a large pot.
- Sauté onion until softened. Add garlic, chili powder, and cumin. Cook for 1 minute.
- Pour in chicken broth and diced tomatoes. Bring to a boil.
- Add cooked chicken and corn. Simmer for 15 minutes.
- Season with salt and pepper.
- Serve hot, topped with tortilla chips, avocado, and lime.

- You can use rotisserie chicken to save time.
- Adjust the spice level to your preference.
