A hearty and comforting soup perfect for a chilly evening. This Italian sausage and potato soup is easy to make and full of flavor.

- 1 pound Italian sausage, removed from casings
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 2 pounds Yukon Gold potatoes, peeled and diced
- 1 teaspoon dried basil
- 1/2 teaspoon dried oregano
- Salt and pepper to taste
- 1 cup heavy cream (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Brown the sausage in a large pot or Dutch oven. Remove from pot and set aside.
- Add olive oil to the pot. Sauté the onion until softened. Add garlic and cook for 1 minute.
- Pour in chicken broth. Add potatoes, basil, and oregano. Season with salt and pepper.
- Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
- Return the sausage to the pot. If using, stir in the heavy cream.
- Heat through. Garnish with fresh parsley and serve.
Notes
- For a spicier soup, use hot Italian sausage.
- You can add other vegetables, such as carrots or celery.
- If you prefer a thicker soup, mash some of the potatoes before adding the sausage.
