A comforting casserole with French onion flavors, chicken, and orzo pasta.
Ingredients

- 1.5 lbs boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 large onion, thinly sliced
- 4 cloves garlic, minced
- 4 cups chicken broth
- 1 cup orzo pasta
- 1 tsp dried thyme
- 1/2 tsp dried rosemary
- Salt and pepper to taste
- 1 cup shredded Gruyere cheese
- 1/4 cup grated Parmesan cheese
Instructions
- Preheat oven to 375°F (190°C).
- Season chicken with salt and pepper.
- Heat olive oil in a skillet. Sear chicken until browned.
- Remove chicken. Sauté onion until caramelized. Add garlic.
- Pour in chicken broth. Bring to a boil.
- Stir in orzo, thyme, and rosemary. Season.
- Return chicken to skillet or transfer to a baking dish.
- Top with Gruyere and Parmesan cheese.
- Bake until chicken is cooked and cheese is melted, about 25-30 minutes.
Notes
- You can add a splash of dry white wine to the onions while cooking.
- For extra flavor, use a good quality chicken broth.
- Adjust seasonings to your preference.
