Description

Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 large onion, thinly sliced
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup orzo pasta
  • 1 tsp dried thyme
  • 1/2 tsp dried rosemary
  • Salt and pepper to taste
  • 1 cup shredded Gruyere cheese
  • 1/4 cup grated Parmesan cheese


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Season chicken with salt and pepper.
  3. Heat olive oil in a skillet. Sear chicken until browned.
  4. Remove chicken. Sauté onion until caramelized. Add garlic.
  5. Pour in chicken broth. Bring to a boil.
  6. Stir in orzo, thyme, and rosemary. Season.
  7. Return chicken to skillet or transfer to a baking dish.
  8. Top with Gruyere and Parmesan cheese.
  9. Bake until chicken is cooked and cheese is melted, about 25-30 minutes.
