A flavorful and easy chicken spaghetti casserole with a spicy kick.
Ingredients

- 1 pound spaghetti
- 2 tablespoons olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 pound cooked chicken, shredded
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 (10.75 ounce) can condensed cream of mushroom soup
- 1 cup milk
- 1/2 cup sour cream
- 1 teaspoon chili powder
- 1/2 teaspoon cayenne pepper (or to taste)
- Salt and pepper to taste
- 2 cups shredded cheddar cheese
Instructions
- Cook spaghetti according to package directions. Drain.
- Heat olive oil in a large skillet. Add onion and cook until softened.
- Add garlic and cook for 1 minute.
- Stir in chicken, diced tomatoes, cream of mushroom soup, milk, sour cream, chili powder, cayenne pepper, salt, and pepper.
- Simmer for 10 minutes.
- Stir in cooked spaghetti and 1 cup of cheese.
- Pour mixture into a greased casserole dish.
- Top with remaining cheese.
- Bake at 350°F (175°C) for 20 minutes, or until cheese is melted and bubbly.
Notes
- Adjust the amount of cayenne pepper to your spice preference.
- You can use rotisserie chicken for convenience.
- Add vegetables like bell peppers or mushrooms for extra flavor.
