Description

Ingredients

  • 1 pound spaghetti
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 pound cooked chicken, shredded
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 (10.75 ounce) can condensed cream of mushroom soup
  • 1 cup milk
  • 1/2 cup sour cream
  • 1 teaspoon chili powder
  • 1/2 teaspoon cayenne pepper (or to taste)
  • Salt and pepper to taste
  • 2 cups shredded cheddar cheese


Instructions

  1. Cook spaghetti according to package directions. Drain.
  2. Heat olive oil in a large skillet. Add onion and cook until softened.
  3. Add garlic and cook for 1 minute.
  4. Stir in chicken, diced tomatoes, cream of mushroom soup, milk, sour cream, chili powder, cayenne pepper, salt, and pepper.
  5. Simmer for 10 minutes.
  6. Stir in cooked spaghetti and 1 cup of cheese.
  7. Pour mixture into a greased casserole dish.
  8. Top with remaining cheese.
  9. Bake at 350°F (175°C) for 20 minutes, or until cheese is melted and bubbly.

  • You can use rotisserie chicken for convenience.
