Ingredients
- Potatoes: 2 large, diced
- Onion: 1 medium, diced
- Bell pepper: 1, diced (any color)
- Olive oil: 2 tablespoons
- Sausage or bacon: 1/2 pound, cooked and crumbled (optional)
- Eggs: 4-6
- Salt and pepper: to taste
- Optional toppings: cheese, hot sauce, herbs
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add potatoes, onion, and bell pepper. Cook until softened, about 10-15 minutes.
- Stir in cooked sausage or bacon, if using. Season with salt and pepper.
- Make wells in the hash and crack an egg into each.
- Cover and cook until eggs are set, about 3-5 minutes.
- Garnish with desired toppings.
- Serve immediately.
