Description
This slow cooker chicken and rice dinner is easy and comforting.
Ingredients

- 1.5 lbs boneless, skinless chicken breasts
- 1 cup long-grain rice
- 4 cups chicken broth
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
Instructions
- Place chicken breasts in the slow cooker.
- Add rice, chicken broth, onion, carrots, celery, thyme, rosemary, salt, and pepper.
- Cook on low for 6-8 hours, or on high for 3-4 hours, or until chicken is cooked through and rice is tender.
- Shred the chicken with two forks.
- Stir everything together and serve.
Notes
- You can add other vegetables, such as peas or corn.
- For extra flavor, use a bay leaf. Remove before serving.
