Description

This slow cooker chicken and rice dinner is easy and comforting.


Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken breasts
  • 1 cup long-grain rice
  • 4 cups chicken broth
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste


Instructions

  1. Place chicken breasts in the slow cooker.
  2. Add rice, chicken broth, onion, carrots, celery, thyme, rosemary, salt, and pepper.
  3. Cook on low for 6-8 hours, or on high for 3-4 hours, or until chicken is cooked through and rice is tender.
  4. Shred the chicken with two forks.
  5. Stir everything together and serve.

Notes

  • You can add other vegetables, such as peas or corn.
  • For extra flavor, use a bay leaf. Remove before serving.
